Carrot Ginger Soup
Ingredients:

  • 1 tablespoon olive oil or ghee
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 lb carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
    Fresh cilantro or parsley for garnish (optional)

Instructions :
Heat the olive oil or ghee in a pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and grated ginger to the pot and cook for another 2 minutes until fragrant. Put the chopped carrots to the pot, along with the vegetable broth, ground cumin, ground coriander, and turmeric powder. Stir to combine.

Bring the soup to a boil. Reduce the heat to low and simmer, covered, for about 20-25 minutes until the carrots are tender.

Once the carrots are cooked through, use an immersion blender or regular blender to make the soup smooth.

Add salt and pepper to season the soup. If the soup is too thick, you can thin it out with a bit of water or additional vegetable broth.
